Yesterday i made a lime and coconut tart, it was so nice and it was even nicer with cream on top.
Ingredients
Pastry
*1 cup plain flour
*100g butter, chopped
*1 tbsp icing sugar
*2 tbsp chilled water
filling
*1/2 cup coconut milk
*3 eggs
*1 cup NESTLE sweetened Condense milk
*1/2 cup lime juice and 1 tbsp of lime rind
*3 tbsp coconut
Pastry Method
1.preheat oven to 200c
2.place flour,butter and icing sugar in food processor, process until mixture resembles breadcrumbs. Add chilled water need until mixture forms dough.
3.roll out dough on lightly floured surface and press into a 24cm pan. Bake 15 minutes until golden, remove from oven, reduce oven to 160c.
filling Method
1.combine coconut milk with eggs,NESTLE sweetened Condense milk,coconut,lime juice and lime rind. Beat until mixture is smooth.
2.pour lime mixture into pastry case.Bake 20 minutes or until just set,cool. if wanted top with lime strips and cream.
